Banana Blueberry Oat Bread

Ingredients

  • 2 large eggs
  • 1/2 cup plain 4% Greek yogurt
  • 1 cup mashed ripe bananas (2 medium large)
  • 6 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/4 cup white whole wheat flour
  • 3/4 cup quick oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup frozen wild blueberries
  • 1/4 cup crushed walnuts
  • 2 tablespoons hemp hearts

Directions

  1. Preheat your oven to 350ºF and lightly grease a 9 x 5” bread pan. In a large mixing bowl, lightly beat the eggs.
  2. Add yogurt, banana, maple, and vanilla. Mix in the flour, oats, baking soda, cinnamon, nutmeg and salt.
  3. Stir in the blueberries and walnuts.
  4. Pour batter into the prepared loaf pan and sprinkle with hemp hearts. Bake for 35 to 40 minutes or until a toothpick inserted into the center comes clean. Let cool. Slice, serve and enjoy!
