Taneisha Morris turns up the comfort with this ooey-gooey grilled cheese stuffed with sliced mushrooms, Swiss cheese and sliced onions.

Ingredients
2 tablespoons butter
1 to 2 tablespoons mayonnaise
1 cup mushrooms, sliced
1/2 small onion, thinly sliced
1 clove garlic, minced
Salt and pepper, to taste
4 slices bread, sourdough, multigrain, white or bread of choice
1 to 1 1/2 cups Swiss cheese, grated
Directions
Heat two tablespoons of butter in a skillet over medium heat. Add mushrooms, onions and garlic. Sauté until caramelized and fragrant. Season with salt and black pepper to taste.
Spread a layer of mayonnaise on the outer side of two slices of bread and place them, mayo-side down, in a heated skillet—layer Swiss cheese on top of the bread. Divide the sautéed mushroom mixture evenly over the cheese. Add another layer of Swiss cheese and top with another slice of bread.
While the bottom is grilling, spread another layer of mayonnaise on the top side of each sandwich. Flip the sandwiches and grill until the bread is golden brown and the cheese is melted. Enjoy!
