These 'cheesecake' bites are a healthy alternative to the real thing.

Ingredients
1 pint of local or organic strawberries
Fresh soft goat cheese (1/2 to 1 teaspoon per strawberry)
2-3 gluten-free graham crackers
Directions
Wash strawberries and remove tops and slice off bottom (so they stand up).
Carefully take a knife and carve out a hole in the middle of each strawberry.
Add goat cheese to each hole.
Add graham crackers to a small baggy, seal and squish to crumble.
Sprinkle crumbled graham crackers on goat cheese.
Eat right away or chill in the fridge for an easy grab and go!
