Almost-free stir fry

The Amazing Stir-fry using produce you would normally compost ! The name of this recipe says it all – it really is easy and always tastes amazing.   Mushrooms help in the production of white blood cells in the body and research is showing that they may make white blood cells act more aggressively against foreign bacteria. They have a meaty texture so you won’t miss the meat!

Ingredients

  • 2 cups onion, sliced
  • 2 cloves garlic, minced
  • 1 1/2 cup pineapple core, sliced thin into coins
  • 1 tablespoon ginger, grated
  • 1 tablespoon extra virgin coconut oil
  • 2 tablespoons honey
  • 2 tablespoons wheat free tamari or coconut aminos
  • 2 cups small broccoli steams peeled
  • 2 cups mushrooms, sliced (you can use canned)
  • 1 cup carrots, sliced
  • 1 cup kale stems or cauliflower leaves, sliced
  • 1/4 teaspoon grated orange peel

Directions

  1. In a large nonstick skillet, stir-fry onion, pineapple core and garlic in oil for one minute.
  2. Add the honey, tamari and ginger. Cook and stir until lightly browned.
  3. Stir-fry the vegetables in the sauce for four to five minutes or until tender. Return meat to the pan and stir gently.
  4. Serve immediately.
