Mushroom snap pea stir-fry

This vegetarian mushroom snap pea stir-fry is a simple, quick meal you can make in minutes. Healthy simplicity at its best.

Ingredients
- 3 cups snap peas
- 1 cup lion’s mane or shiitake mushrooms, chopped
- 2 teaspoons coconut oil
- 1 clove garlic, minced
- 1 teaspoon ginger root, minced
- 2 tablespoons water
- 1/2 teaspoon sesame oil, toasted
- 1/4 teaspoon grey or pink sea salt
- 1 tablespoon sesame seeds, black and/or white
Directions
- Trim the tip of each sugar snap pea. Set aside.
- In large skillet, warm olive oil over medium heat; sauté garlic and ginger until fragrant, about one minute.
- Add peas and water. Cover and steam until tender-crisp, about three minutes.
- Garnish with a drizzle of sesame oil, sea salt and sesame seeds.
