Ingredients
2 cups cooked and shredded chicken
1/2 cup finely diced cucumber
1/2 cup Greek yogurt
1/4 cup chopped Kalamata olives
1/4 cup chopped roasted red peppers
1/4 cup crumbled feta
1 lemon, zest and juice
3 tablespoons minced red onion
1 tablespoon freshly chopped parsley
1 tablespoon capers
1 teaspoon Greek seasoning
Directions
Mix all of the ingredients together in a large bowl. Serve on top of some mixed greens, in a sandwich or in a lettuce or tortilla wrap.
