Healthy blue cheese salad

This is a fresh, easy way to make a salad. Apple, celery and blue cheese is a classic combination!

Ingredients
Vinaigrette
40ml extra virgin olive oil
30ml apple cider vinegar
Small handful of roughly chopped Marcona almonds
Small handful of finely chopped chives
Salt and pepper
Salad
1 apple, sliced thin
1 celery stock, sliced thin
100g gorgonzola blue cheese
Crusty bread
Directions
Vinaigrette
In a bowl, add olive oil, apple cider vinegar, almonds, chives and a couple of pinches of both salt and pepper.
Stir gently together for 60 seconds incorporating all ingredients.
Salad
On a dinner plate, scatter rustically sliced apple and sliced celery. Make a tight low pile.
Dress the apples and celery with the vinaigrette.
Lastly, with a cheese grater, grate gorgonzola blue cheese on top of the salad. It will look like blue cheese snow.
Serve with crusty bread. E
