Healthy blue cheese salad

This is a fresh, easy way to make a salad. Apple, celery and blue cheese is a classic combination! 




  • 40ml extra virgin olive oil
  • 30ml apple cider vinegar
  • Small handful of roughly chopped Marcona almonds
  • Small handful of finely chopped chives
  • Salt and pepper


  • 1 apple, sliced thin
  • 1 celery stock, sliced thin
  • 100g gorgonzola blue cheese
  • Crusty bread



  1. In a bowl, add olive oil, apple cider vinegar, almonds, chives and a couple of pinches of both salt and pepper.  
  2. Stir gently together for 60 seconds incorporating all ingredients.


  1. On a dinner plate, scatter rustically sliced apple and sliced celery. Make a tight low pile.
  2. Dress the apples and celery with the vinaigrette. 
  3. Lastly, with a cheese grater, grate gorgonzola blue cheese on top of the salad. It will look like blue cheese snow.  
  4. Serve with crusty bread. Enjoy!
