Bacon, cheddar & chive biscuits

The ultimate savoury biscuit recipe you will ever see! Loaded with crispy bacon, extra-old cheddar cheese, and chives. The biscuits come out perfectly flaky and buttery every time!

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 10 tablespoons cold unsalted butter
  • 1 1/2 cups extra old cheddar, grated
  • 1/2 cup cooked bacon, chopped
  • 1/4 cup chives, chopped
  • 1 1/4 cup cold buttermilk, plus a bit more for brushing

Directions

  1. Preheat oven to 450°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl whisk together flour, baking powder, baking soda, garlic powder, onion powder and salt. Add cold butter and, using your fingers snap the butter into the flour mixture until the mixture is crumbly and the butter pieces are the size of peas. Place bowl in the freezer for 15 minutes to re-chill the butter.
  3. Remove the bowl from the freezer and mix in cheddar - reserving a quarter cup to top the biscuits with chives and bacon and make a well in the centre of the mixture. Pour in the cold buttermilk and gently mix until combined - being careful not to over-mix —until it forms a ragged wet and sticky dough.
  4. Turn the dough out onto a lightly floured work surface and bring the dough together to form a ball. 
  5. Roll the dough into an 18-inch x 14-inch rectangle about a quarter-inch thick. Fold the bottom half of the rectangle onto itself and then fold the top half to meet the bottom. Then fold the left side into the middle and the right side to meet the left side. Gently roll the dough out back into an 18-inch x 14-inch rectangle, flour the surface as needed, and repeat the folding process one more time. When rolling the dough out this last time roll it into a 10-inch square that is half-inch thick.
  6. Using a three-inch round floured cutter, cut out biscuits and place them on a prepared baking sheet - you should get nine biscuits. Ensure that the unbaked biscuits are touching - this will help them rise. Form the scraps of dough into a ball and roll and fold one more time. Cut and transfer to baking sheet.
  7. Brush biscuits with buttermilk and sprinkle with reserved grated cheddar.
  8. Bake for 15 minutes, remove from the oven and let cool on baking sheet for five minutes. Enjoy!
