Baked beans with sausages

These easy baked beans are loaded with mouthwatering flavours thanks to the sausage and a medley of Dijon mustard, apple cider vinegar and tomatoes.

Ingredients
- 2 pounds navy beans
- 1/2 lb smoked almonds, chopped
- 2 sweet onions, finely diced
- 4-5 cloves garlic, smashed
- 1 (4-oz) tin of tomato paste
- 8 ounces of canned tomatoes
- 2 tablespoons Dijon mustard
- 1/4 cup maple syrup
- 1/4 cup apple cider vinegar
- 2 tablespoons butter
- 1 litre of vegetable stock
- 3 bay leaves
- 3-4 sprigs of thyme
- 4 meat-free sausages cooked
Directions
- Soak beans before you go to bed in triple their amount in water.
- Add the butter.
- Add onions and garlic to butter and beans.
- Sauté the onions and garlic in the butter for one minute or until soft.
- Add the tomato paste and sauté for another minute.
- Add tomatoes, mustard, syrup, vinegar, molasses and beans, and stir well.
- Add half of the stock and enough water to cover the beans.
- Cook until done.
- Serve with cooked sausages. Enjoy!
