Breakfast burgers with maple mayo
Ingredients
- 455 grams ground pork
- 1 tablespoon fresh sage, finely chopped
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon cracked black pepper
- 4 eggs, fried
- 8 pieces double smoked bacon
- 4 slices cheddar cheese
- Maple mayo for dressing (recipe to follow)
- 4 brioche buns
- Avocados for serving
Maple mayo:
- 1/2 cup mayonnaise
- 2 tablespoons maple syrup
- 1 tablespoon grainy dijon mustard
- 1 teaspoon hot sauce
Directions
- To make the burgers, combine pork, sage, onion and garlic powder, salt and pepper in a mixing bowl. Mix until well combined.
- Divide the pork mixture into four even portions and flatten into patties.
- Cook patties on medium high heat in a cast iron pan, flipping after about three minutes. Continue to cook the other side for another three minutes. Remove the patties to a paper towel lined plate.
- To assemble the breakfast burgers, liberally spread some maple mayo to the top and bottom of a bun. Top with a burger followed by a slice of cheese, a few pieces of bacon and finally a fried egg. Serve with a side of the maple mayo and slices of avocado and enjoy!
Maple mayo:
- Combine all ingredients in a bowl and mix until well combined.
