Breakfast burgers with maple mayo

Ingredients

  • 455 grams ground pork
  • 1 tablespoon fresh sage, finely chopped
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon cracked black pepper
  • 4 eggs, fried
  • 8 pieces double smoked bacon
  • 4 slices cheddar cheese
  • Maple mayo for dressing (recipe to follow)
  • 4 brioche buns
  • Avocados for serving

Maple mayo:

  • 1/2 cup mayonnaise
  • 2 tablespoons maple syrup
  • 1 tablespoon grainy dijon mustard
  • 1 teaspoon hot sauce

Directions

  1. To make the burgers, combine pork, sage, onion and garlic powder, salt and pepper in a mixing bowl. Mix until well combined.
  2. Divide the pork mixture into four even portions and flatten into patties.
  3. Cook patties on medium high heat in a cast iron pan, flipping after about three minutes. Continue to cook the other side for another three minutes. Remove the patties to a paper towel lined plate.
  4. To assemble the breakfast burgers, liberally spread some maple mayo to the top and bottom of a bun. Top with a burger followed by a slice of cheese, a few pieces of bacon and finally a fried egg. Serve with a side of the maple mayo and slices of avocado and enjoy!

Maple mayo:

  1. Combine all ingredients in a bowl and mix until well combined.
