To make the burgers, combine pork, sage, onion and garlic powder, salt and pepper in a mixing bowl. Mix until well combined.
Divide the pork mixture into four even portions and flatten into patties.
Cook patties on medium high heat in a cast iron pan, flipping after about three minutes. Continue to cook the other side for another three minutes. Remove the patties to a paper towel lined plate.
To assemble the breakfast burgers, liberally spread some maple mayo to the top and bottom of a bun. Top with a burger followed by a slice of cheese, a few pieces of bacon and finally a fried egg. Serve with a side of the maple mayo and slices of avocado and enjoy!
