Caramelized banana bites

I made these to enjoy with my Blueberry Pancake, but loved them so much that I now try to sneak them into my breakfasts all the time. I love how they sizzle in the pan as you fry them, and you can smell the sweet coconut, cinnamon and maple flavours that they’re absorbing- it’s amazing- plus they’re so quick to make. You have to try them with the pancakes, but also experiment by adding these to a simple bowl of oatmeal: they’ll instantly transform it into something really special.

Ingredients
- 4 bananas
- 1 tablespoon coconut oil
- 3 tablespoons maple syrup
- 1 teaspoon ground cinnamon
Directions
- Slice the bananas into generous two centimeter-thick slices.
- Heat a frying pan with the coconut oil, maple syrup and cinnamon over medium-high heat until it is all really hot and bubbling. Add the banana slices; they should sizzle the moment they hit the pan.
- Reduce the heat and cook for two to three minutes, stirring occasionally to make sure the slices are fully coated and cooking evenly. When they’re done they should be soft, gooey and coated in caramelized deliciousness!
