Charred-onion and tomato salsa

Everyone needs a simple salsa recipe in their summer repertoire, and Chef Rodney's is as good as it gets. One scoop and you'll never buy the jarred stuff again.



  • 900 grams fresh, sweet tomatoes, roughly chopped
  • 2 sweet onions, split and grilled or pan-seared and baked, then roughly chopped
  • 1 jalapeño pepper, finely sliced (keep the seeds if you want it really spicy)
  • 3/4 cup finely chopped cilantro
  • Juice of 2 limes
  • Salt to taste (don't be shy!)


  1. Add the ingredients to a bowl.
  2. Generously season with salt and let hang out for 15 minutes.
  3. Check the seasoning again and serve with your choice of chips.
