Everyone needs a simple salsa recipe in their summer repertoire, and Chef Rodney's is as good as it gets. One scoop and you'll never buy the jarred stuff again.

Ingredients
900 grams fresh, sweet tomatoes, roughly chopped
2 sweet onions, split and grilled or pan-seared and baked, then roughly chopped
1 jalapeño pepper, finely sliced (keep the seeds if you want it really spicy)
3/4 cup finely chopped cilantro
Juice of 2 limes
Salt to taste (don't be shy!)
Directions
Add the ingredients to a bowl.
Generously season with salt and let hang out for 15 minutes.
Check the seasoning again and serve with your choice of chips.
