Ingredients
3 tablespoons butter
1 white onion, finely diced
2 jalapeños, finely diced
2 celery stalks, finely diced
3 garlic cloves, finely diced
1 tablespoon sage, freshly chopped
1 loaf of cornbread, cubed (stale is best!)
1/4 bunch parsley, freshly chopped
1 cup cheddar cheese, grated
Salt and black pepper, for seasoning
1 cup chicken stock
2 eggs
Directions
In a skillet, melt the butter then add the onion, jalapenos, celery, garlic, and sage.
Cook on medium-low for eight to 10 minutes until softened, then allow to cool.
Then add to a large mixing bowl, followed by cornbread, parsley, and cheese.
Mix well and season with salt and pepper. Then add the stock and eggs and mix well.
Transfer to a buttered baking dish, then place in a 375° oven for 30 to 40 minutes, or until the top is golden brown.
