Cheese skewers two ways

Reinvent the cheese platter with these unique cheese skewers. Both are perfect bite-sized appetizers to bring to the table at any get together!

Ingredients

Beet and Goat Cheese Skewers

  • 2 medium beets, cooked and peeled
  • 20 x 1/2 teaspoon of goat cheese rolled into balls
  • 1 teaspoon fresh thyme leaves
  • Olive oil
  • Balsamic syrup
  • Sea salt and black pepper to taste

Directions

For the Beet and Goat Cheese Skewers 

  1. On a mandolin, slice the beets approximately 1⁄8" thick. Using a 1" round cookie cutter, cut 30 circles from the beet slices.
  2. On a lined baking sheet, lay out 10 beet circles and place a ball of goat cheese on each.
  3. Gently press a second beet slice on top, another ball of chevre and a final third circle of beet.
  4. Press the stack down to condense slightly and insert a skewer from the top.
    Drizzle with olive oil and balsamic syrup, sprinkle with thyme leaves and season to taste. Serve and enjoy!

For the Watermelon and Feta Cheese Skewers 

  1. Place the feta square on top of the watermelon cube and a leaf of basil on the cheese.
  2. Gently push the skewer into the top of the stack, gently twirling the skewer as you press to avoid splitting the cheese.
  3. Repeat until you have made 4 skewers. Drizzle with olive oil and season to taste. Serve and enjoy!
