Cheesy herbed soda bread

This quick bread is perfect for the beginner baker! It has cheddar, parmesan, and fresh herbs but is also easily customized for whatever kind of brunch you're having. Serve it with charcuterie, cheese, fancy butters and more!

Ingredients

  • 2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon cream of tartar
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cracked black pepper
  • 2 tablespoons fresh chopped rosemary
  • 1 tablespoon fresh chopped chives
  • 2 cups grated cheddar cheese
  • 1/3 cup grated parmesan cheese
  • 1 cup buttermilk, room temperature
  • 1 large egg, room temperature

Directions

  1. Preheat your oven to 425°F and set rack to middle position. Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cream of tartar, salt, pepper, herbs, and cheeses.
  3. Add the egg to the buttermilk and lightly whisk together until combined.
  4. Add the buttermilk mixture to the flour mixture and lightly mix with a rubber spatula or wooden spoon until a ball forms. Dough will be very sticky.
  5. Generously flour your work surface and your hands. Turn the dough out onto the work surface and gently shape the dough into a ball shape using your hands. 
  6. Place the dough onto your prepared baking sheet. Using a sharp knife, cut an X on top of the soda bread. 
  7. Season the top with more salt and pepper and bake in the oven for 25-30 minutes. The top of the loaf should be golden brown once finished.
  8. Let cool for 20 minutes on a rack before slicing and serving. Store loaf in an airtight container or wrapped tightly in plastic wrap for up to four days.
