Cheesy pimento rice

Ingredients

  • 1-1/2 cups white rice
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup grated old cheddar
  • 3 tablespoons heavy cream
  • 1/2 cup diced jarred pimento

Directions

  1. Add the rice along with 2-3/4 cups of water to a medium pot.  Scatter in the salt, garlic and onion powder.  Cover and bring to a simmer. Cook on low for 15-18 minutes. Turn off the heat and allow the rice to rest for five minutes.
  2. Use a fork to fluff up the rice and add the cheese, pimento and heavy cream. Stir to combine until the cheese is melted and ooey gooey.
