Cauliflower fried rice

A healthy dish that works as a side to any dish.

Ingredients
- 1 medium head of cauliflower
- 2 tablespoons oil (Canola, Vegetable, Grape Seed, etc)
- 3 cloves of minced garlic
- 1/2 teaspoon red chili flakes
- 1/2 cup frozen peas
- 1 small carrot, cut into small cubes
- 3 tablespoon soy sauce
- 2 teaspoon sesame oil
- 2 large eggs, beaten
- 1/4 cup green onions, finely sliced
- Salt and Pepper to Taste
Directions
- Using a Food Processor/the side of a Box Grater, process/grate Cauliflower until it breaks down and resembles small grains of rice.
- Heat Oil in a large Frying Pan on medium-high heat.
- Add Garlic, and fry until fragrant (15 seconds).
- Add Chili Flakes, which should toast for just five seconds or so.
- Add processed Cauliflower, Peas, and Carrots to pan, and increase heat to high.
- Sautee vegetables for five to eight minutes until Cauliflower is tender, but still has a bit of bite.
- Add Soy Sauce and Sesame Oil, and stir to combine.
- Turn the heat down to medium, and create a well in the middle of the Cauliflower mixture, and add eggs.
- Allow Eggs to set for 30 seconds, before stirring to break them up, and fold into cauliflower.
- Taste mixture, and add Salt and Pepper to your preference.
- Garnish with green onions, and eat right away!
