A healthy dish that works as a side to any dish.

Ingredients
1 medium head of cauliflower
2 tablespoons oil (Canola, Vegetable, Grape Seed, etc)
3 cloves of minced garlic
1/2 teaspoon red chili flakes
1/2 cup frozen peas
1 small carrot, cut into small cubes
3 tablespoon soy sauce
2 teaspoon sesame oil
2 large eggs, beaten
1/4 cup green onions, finely sliced
Salt and Pepper to Taste
Directions
Using a Food Processor/the side of a Box Grater, process/grate Cauliflower until it breaks down and resembles small grains of rice.
Heat Oil in a large Frying Pan on medium-high heat.
Add Garlic, and fry until fragrant (15 seconds).
Add Chili Flakes, which should toast for just five seconds or so.
Add processed Cauliflower, Peas, and Carrots to pan, and increase heat to high.
Sautee vegetables for five to eight minutes until Cauliflower is tender, but still has a bit of bite.
Add Soy Sauce and Sesame Oil, and stir to combine.
Turn the heat down to medium, and create a well in the middle of the Cauliflower mixture, and add eggs.
Allow Eggs to set for 30 seconds, before stirring to break them up, and fold into cauliflower.
Taste mixture, and add Salt and Pepper to your preference.
Garnish with green onions, and eat right away!
