Ingredients

1 cup pumpkin puree

1-1/2 cups grated white cheddar, divided

1 cup goat cheese

1/3 cup caramelized onions

1 teaspoon chilli flakes

1 teaspoon kosher salt

1 teaspoon cracked black pepper

2 - 3 tablespoons chopped fresh herbs, such as parsley, rosemary or thyme

1 small, hallowed out roasted baking pumpkin
Directions
- Preheat oven to 375°.
- In a large mixing bowl thoroughly combine pumpkin puree, half the cheddar, goat cheese, caramelized onions, chilli flakes, salt and pepper.
- Fill pumpkin with mixture and top with remaining cheddar.
- Bake dip for 20-25 minutes. To brown the top of the dip even more, switch on the broiler for the last two minutes of cook time.
- Sprinkle with fresh herbs and serve with crackers, veggies and pretzels. Enjoy!
