Chicken caesar pitas

Everyone loves a chicken salad sandwich but if you want to add a really flavourful twist, I highly recommend this amazing Caesar Chicken Salad. Instead of mayo in this recipe, I used a homemade caesar salad dressing that uses yogurt as a base. Of course, you can always use store-bought caesar dressing instead, but there’s nothing quite like homemade in my opinion. I toss that with some leftover shredded chicken and then serve it in a pita with fresh Romaine lettuce and some bacon.

Ingredients

  • 1/2 cup plain yogurt
  • 1 teaspoon anchovy paste
  • 1 garlic clove, minced
  • 1/2 lemon, juiced
  • 1/4 cup freshly grated Parmesan cheese
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons olive oil
  • 2 tablespoons chopped fresh parsley
  • 2 cups chicken, cooked and shredded
  • 4 slices cooked bacon
  • 4 romaine lettuce leaves
  • 2 pitas, cut in half

Directions

  1. Mix plain yogurt with anchovy paste, garlic, lemon juice, freshly grated Parmesan cheese, Worcestershire sauce, olive oil, and chopped fresh parsley.
  2. Toss with chicken and serve in pita with fresh romaine lettuce and bacon.
