Chinese sweet potato and ginger dessert

Ingredients

  • 6 cups of water
  • 1 sweet potato (311 grams), peeled and cubed about 1.5 x 1.5 centimeter cubes
  • 3 pieces of ginger, peeled and smashed (1 x 2.5 centimeter pieces)
  • 5 dates
  • 15 dried longan pulp
  • 2 teaspoons of goji berries
  • 2 tablespoons of coconut sugar

Directions

Preparation:

  1. Peel and cut the sweet potato.
  2. Peel the ginger and cut into three pieces. Using a mallet, or the slide of the knife to smash the ginger to flatten it. This helps to release the juices. 

Cooking time:

  1. In a pot, add the sweet potatoes, dates and ginger. Bring the water to a boil and simmer for 40 minutes or until the sweet potato is soft.
  2. At 20 minutes, add the longan pulp.
  3. At 30 minutes, add the goji berries and coconut sugar. Stir, taste and adjust the sweetness.
  4. Ladle into bowls and serve.
