Chinese sweet potato and ginger dessert
Ingredients
- 6 cups of water
- 1 sweet potato (311 grams), peeled and cubed about 1.5 x 1.5 centimeter cubes
- 3 pieces of ginger, peeled and smashed (1 x 2.5 centimeter pieces)
- 5 dates
- 15 dried longan pulp
- 2 teaspoons of goji berries
- 2 tablespoons of coconut sugar
Directions
Preparation:
- Peel and cut the sweet potato.
- Peel the ginger and cut into three pieces. Using a mallet, or the slide of the knife to smash the ginger to flatten it. This helps to release the juices.
Cooking time:
- In a pot, add the sweet potatoes, dates and ginger. Bring the water to a boil and simmer for 40 minutes or until the sweet potato is soft.
- At 20 minutes, add the longan pulp.
- At 30 minutes, add the goji berries and coconut sugar. Stir, taste and adjust the sweetness.
- Ladle into bowls and serve.
