Chocolate chip banana bread in a mug
Ingredients
- 1/4 cup (60 milliliters) all-purpose flour
- 2 tablespoons (30 milliliters) organic cane sugar
- 1/4 teaspoon (1 milliliter) baking powder
- 1 tablespoon (15 milliliters) vegetable oil
- 1/2 medium ripe banana, mashed
- 3 tablespoons (45 milliliters) unsweetened nondairy milk
- 1 tablespoon (15 milliliters) vegan chocolate chips
Directions
- Combine the flour, sugar and baking powder in a large mug; stir until smooth.
- Add the oil, mashed banana, nondairy milk and chocolate chips; stir until combined, scraping the bottom of the mug to incorporate all the dry ingredients.
- Microwave on High for 1 1/2 minutes or until a tester inserted in the center comes out clean.
My Tip
Don’t let appearances deceive you when you’re making this recipe. The center cooks first in a microwave, while the top may appear slightly undercooked. Make sure to check with a tester so you don’t under- or overcook the banana bread. You may need to adjust the cooking time, depending on the wattage of your microwave.
