Chocolate peanut butter dates

You are going to love these no-bake bars. They are out-of-this-world delicious— think sweet and chewy caramel-tasting dates stuffed with creamy peanut butter and crunchy, salted peanuts… then smothered in luxurious chocolate! Is your mouth watering yet?



  • 14 to 16 pitted medjool dates
  • 8 teaspoons creamy peanut butter
  • 32 roasted and salted whole peanuts
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup roasted, salted peanuts finely chopped


  1. Spread each date open and line the inside with about half a teaspoon of peanut butter and two whole peanuts (or multiple half pieces). Pinch dates closed (it’s OK if they’re partially opened).
  2. Add chips to a microwave-safe small bowl or mug, and melt them in the microwave until smooth and creamy. It’s important not to burn the chocolate so we recommend doing this in 20-second intervals, stopping and stirring until you reach a desired silky texture. Alternatively, you can use a double boiler to melt chocolate.
  3. Using a spoon, generously drizzle the melted chocolate over each stuffed date (you’ll have enough chocolate to be liberal). You can choose to leave it in a drizzly format or spread the chocolate completely over the top half of dates using the back of a spoon or your finger (or simply dunk the top portion of dates directly into the chocolate). Sprinkle on crushed peanuts and stash in the fridge for at least 20 minutes to firm the chocolate.

TIP: You can choose another nut combo like almonds/almond butter or cashews/cashew butter.

TIP: Dates will keep in the fridge for up to two weeks. Alternatively, you can store leftovers in freezer, but it’s important to let your dates defrost on the counter before eating— the dates become super-hard when frozen and can hurt your teeth when you bite into them.
