Christmas Swedish meatballs

These turkey and pork meatballs are hearty and satisfying.

Ingredients
- 1 lb ground turkey
- 1 lb ground pork
- 1 1/2 teaspoons salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon allspice
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon clove
- 2 eggs
- 1/2 cup breadcrumbs
- 3 tablespoons olive oil
- 1/4 cup butter
- 1/4 cup flour
- 2 cups beef stock
- 1 cup whipping cream
- 1 tbsp dijon mustard
- 1 teaspoon beef bouillon
- 1/4 bunch parsley, finely chopped
Directions
- In a large mixing bowl, combine the turkey, pork, salt, spices, eggs, and breadcrumbs. Mix to combine, being mindful not to overmix.
- Shape into 24 evenly-sized meatballs (a small ice cream scoop is perfect for this!).
- Once formed, heat the olive oil in a large skillet. Sear the meatballs on all sides, then remove and set aside.
- Reduce the heat then add the butter to form a roux. Add the stock and bring it up to a gentle boil, whisking to avoid any lumps. Season with salt and pepper, then add the cream, mustard, and bouillon.
- Add back the meatballs. Return to a gentle boil, then reduce to a simmer. Allow the meatballs to cook in the sauce until thickened and the meat has cooked through.
- Top with fresh parsley, then serve and enjoy!
