Christmas Swedish meatballs

Ingredients

  • 1 lb ground turkey
  • 1 lb ground pork
  • 1 1/2 teaspoons salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon clove
  • 2 eggs
  • 1/2 cup breadcrumbs
  • 3 tablespoons olive oil
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups beef stock
  • 1 cup whipping cream
  • 1 tbsp dijon mustard
  • 1 teaspoon beef bouillon
  • 1/4 bunch parsley, finely chopped

Directions

  1. In a large mixing bowl, combine the turkey, pork, salt, spices, eggs, and breadcrumbs. Mix to combine, being mindful not to overmix. 
  2. Shape into 24 evenly-sized meatballs (a small ice cream scoop is perfect for this!). 
  3. Once formed, heat the olive oil in a large skillet.  Sear the meatballs on all sides, then remove and set aside. 
  4. Reduce the heat then add the butter to form a roux.  Add the stock and bring it up to a gentle boil, whisking to avoid any lumps.  Season with salt and pepper, then add the cream, mustard, and bouillon. 
  5. Add back the meatballs. Return to a gentle boil, then reduce to a simmer. Allow the meatballs to cook in the sauce until thickened and the meat has cooked through. 
  6. Top with fresh parsley, then serve and enjoy!
