Coconut carrot porridge

Creamy porridge made with carrots, coconut, raisins and condensed milk. 



  • 1/4 cup oats
  • 1 tablespoon ghee
  • 3 medium carrots, grated
  • 1 1/2 cups condensed milk
  • 3/4 cup coconut cream, plus more for serving
  • 1 teaspoon ground cardamom
  • 1 tablespoon raisins, for serving Ground cinnamon, for serving


  1. In a medium saucepan, combine the ghee and carrots. Cook over medium heat for three minutes, or until the carrots soften.
  2. Add the condensed milk, coconut cream, one cup of water, oats and cardamom. Bring to a boil and simmer for five to six minutes. Remove from heat and let cool for five minutes.
  3. Transfer to a high-powered blender and blend until smooth.
  4. Portion the porridge between bowls and serve with a topping of raisins, a drizzle of coconut cream and a dash of cinnamon. Enjoy!
