Cumin-roasted sweet potatoes

Ingredients

  • 2 medium sweet potatoes, peeled and cut into 2.5 centimeter chunks
  • 2 tablespoons (30 ml) olive oil
  • 2 teaspoons (10 ml) honey
  • 1 teaspoon (4 g) ground cumin
  • 1/2 teaspoon (3 g) kosher salt
  • 1/4 teaspoon (1 g) cayenne pepper
  • 1/2 lime, juiced

Directions

  1. Preheat oven to 375°F (190°C).
  2. Stir sweet potatoes with oil, honey, cumin, salt and cayenne on a rimmed baking sheet. Roast until tender and golden, 30 to 35 minutes, tossing halfway.
  3. Toss with lime juice just before serving.
