Denver waffle omelette

  • 2 large eggs
  • 1 pinch table salt
  • 1 pinch black pepper
  • 2 tablespoons reduced-fat cheddar cheese
  • 1 tablespoon uncooked scallions, chopped
  • 1 tablespoon finely chopped sweet red peppers
  • 14 grams cooked Canadian bacon
  • 2 sprays cooking spray or olive oil pump


  1. Preheat a nonstick waffle iron. Place eggs in a medium bowl; add salt and black pepper. Beat with a fork until well blended. Stir in cheese, scallions, bell pepper, and bacon.
  2. Spray waffle iron with cooking spray. Evenly pour egg mixture into waffle maker, close lid, and cook until browned and cooked through, about two minutes. Serve warm.
