Meatballs are one of the most versatile menu items. Use them in pasta, in soup and sandwiches/pitas. But the effort in making meatballs can be a tall order when the dinner bell is ringing, however this need not be the case.
Chicken sausage is already seasoned and ready to go, using it as a meatball base makes this dish (and many others) come together in a flash.
1. Preheat the oven to 425F. Pinch the meat out of the sausage casing in meatball sized portions. Place on a parchment lined baking sheet and bake for 15 minutes.
2. Meanwhile, in a food processor combine the feta and roasted red peppers; blend until smooth. Set Aside.
3. In a bowl combine all the ingredients for the Tzatziki. Set aside.
Warm the pita in the oven for a minute. Spread the tzatziki and roasted red pepper sauce on the pita, add red onion, cucumber and finish with meatballs.
