Easy oven baked lamb chops

Ingredients
- 12 rib or loin lamb chops, about 85 grams each
- 2 tablespoons olive oil
- Salt and freshly cracked black pepper
- 2 tablespoons Dijon mustard
- 1/4 cup fresh chopped mint
- Chopped mint
- Herbs de Provence
Directions
- Preheat oven to 375º.
- Season lamb with salt and pepper, moisten with olive oil and rub with Dijon mustard. Use a brush to evenly distribute.
- Sprinkle with chopped mint and herbs de Provence.
- Arrange lamb on a baking sheet and bake 12 minutes or until done to your liking.
