Easy oven baked lamb chops

Get dinner on the table tonight with this easy, no fuss recipe from Christine Cushing.



  • 12 rib or loin lamb chops, about 85 grams each
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper
  • 2 tablespoons Dijon mustard
  • 1/4 cup fresh chopped mint
  • Chopped mint
  • Herbs de Provence


  1. Preheat oven to 375º.
  2. Season lamb with salt and pepper, moisten with olive oil and rub with Dijon mustard. Use a brush to evenly distribute.
  3. Sprinkle with chopped mint and herbs de Provence.  
  4. Arrange lamb on a baking sheet and bake 12 minutes or until done to your liking.
