Fall spiced BBQ pork ribs

A perfectly spiced dish that tastes just like fall. Great for your next dinner gathering.

Ingredients

  • 3.5 kilograms baby back pork ribs

For the rub:

  • 1 cup brown sugar
  • 1/4 kosher salt
  • 3 tablespoons garam masala
  • 1 tablespoon chilli powder
  • 2 teaspoons ground pepper
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin

For the BBQ sauce:

  • 1 sweet onion, chopped
  • 1 tablespoon vegetable oil
  • 3 cups ketchup
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 2 tablespoons rub
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon hot pepper flakes

Directions

  1. Pre-heat oven to 350°.
  2. Place ribs on a baking sheet and mix together ingredients for the rub, reserving two tablespoons for the BBQ sauce. Cover ribs with the rub and wrap ribs tightly in tinfoil. Bake ribs for two hours.
  3. While ribs are in the oven make the BBQ sauce. Heat oil in a medium sized pot and cook onions until translucent. Add remaining ingredients and cook on medium-low for 30 mins. Using an immersion blender blitz the BBQ sauce until smooth.
  4. Once ribs have baked for two hours, remove them from the oven, unwrap them and slather with BBQ sauce. Heat the BBQ to hight heat and grill, turning every few minutes until the ribs have developed a nice char.
