16 slices bacon

1 cup caramelized onions

1 egg

1/4 cup BBQ sauce

680 grams ground pork

1 tablespoon honey
Directions
- In a large bowl mix pork with onions, BBQ sauce, and crack the egg into the mix. Use your hands to mix everything together.
- Use the slices of bacon to make a bacon blanket to wrap around the pork. Put a sheet of parchment down on the counter. Make a right angle with two slices. Then follow across the bacon going left to right with more slices of bacon and then when you make it to the end go top to bottom interlocking the bacon to look like a weave. Place the seasoned pork on the bacon blanket and use the parchment sheet underneath to roll it into a log. Transfer to a baking pan and bake at 325 or into a smoker at 325F for three to four hours until internal temperature reaches 160F.
- Let rest and brush with honey.
