General tso's grilled chicken

A delightfully flavorful way to change up your usual BBQ grilled chicken.

Ingredients
- 4 chicken breasts, cubed and seasoned with salt and black pepper
- 2-3 tablespoons avocado oil + 2 tablespoons for sauce
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons hoisin sauce
- 3 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon sesame oil
- 1/2 cup chicken stock
- 2 tablespoons honey
- 1 teaspoon chilli paste
- Sesame seeds, green onions and roasted peanuts, for garnish
Directions
- In a sauté pan, brown the chicken cubes in avocado oil.
- Cook completely. Remove from the pan and reserve.
- In the same pan, add some additional avocado oil, then the garlic and ginger and cook for about one to two minutes in medium heat.
- Add in the hoisin sauce, soy sauce, rice wine vinegar, sesame oil, chicken stock, honey, and chilli paste.
- Allow the sauce to simmer and thicken, then add the chicken back in and toss well.
- Place the chicken over the noodles in the takeout boxes and garnish with sesame seeds, scallions and peanuts. Serve and enjoy!
