General tso's grilled chicken

A delightfully flavorful way to change up your usual BBQ grilled chicken.

Ingredients

  • 4 chicken breasts, cubed and seasoned with salt and black pepper
  • 2-3 tablespoons avocado oil + 2 tablespoons for sauce
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons hoisin sauce
  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon sesame oil
  • 1/2 cup chicken stock
  • 2 tablespoons honey
  • 1 teaspoon chilli paste
  • Sesame seeds, green onions and roasted peanuts, for garnish

Directions

  1. In a sauté pan, brown the chicken cubes in avocado oil.
  2. Cook completely. Remove from the pan and reserve.
  3. In the same pan, add some additional avocado oil, then the garlic and ginger and cook for about one to two minutes in medium heat.
  4. Add in the hoisin sauce, soy sauce, rice wine vinegar, sesame oil, chicken stock, honey, and chilli paste.
  5. Allow the sauce to simmer and thicken, then add the chicken back in and toss well.
  6. Place the chicken over the noodles in the takeout boxes and garnish with sesame seeds, scallions and peanuts. Serve and enjoy!
