Ground turkey sloppy joes

Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 sweet onion, minced
  • 1 red pepper, chopped
  • 1 carrot, shredded
  • 2 cloves of garlic
  • 1 tablespoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 cup of canned crushed tomatoes
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon honey
  • 2 teaspoons soy sauce

Garnish:

  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • 1 large cucumber, sliced thin
  • 4 radishes, sliced thin
  • 1 red onion, sliced thin (optional)
  • 6 slices of good toast

Directions

  1. Heat half the oil in a large skillet over medium heat. Add the turkey and cook until brown. Remove from pan and set aside.
  2. In the same pan, add the rest of the oil, then the onion, red pepper, and carrot. Season and cook until soft, stirring for five to six minutes. Add garlic and spices, and sauté for another minute.
  3. Add the turkey back into the pan along with the tomatoes, and Worcestershire and soy sauces, and cook until reduced by half.
  4. In a small bowl, season the cucumber, radishes and onion with salt. Let sit for five minutes. Then add a little oil and vinegar, and toss. Let sit for 10 more minutes. 
  5. To serve, spoon the meat mixture on top of buttered toast and garnish with vegetables.
