Afirm Pristine shows us that summer grilling isn't just for meat with this creamy grilled halloumi dish featuring roasted juicy green grapes and crunchy arugula topped with a homemade dressing made with pistachios and fresh thyme.

Ingredients
Dressing
50 ml olive oil
30 ml red wine vinegar
A small handful pistachios, coarsely chopped
A few sprigs of thyme
Pinch of Salt and Pepper
Roasted grapes
A small handful of seedless green grapes
Drizzle of olive oil
Salt and pepper to season
Hallomi
1pc (250 grams) halloumi
1 pack of baby arugula to serve
Directions
Dressing
Place olive oil, red wine vinegar and pistachios into a small mixing bowl and stir to incorporate all ingredients.
Add a few sprigs of thyme and pinches of salt and pepper to dressing and stir again.
Roasted grapes
In a medium-size pan, on medium heat, add a few drizzles of olive oil and add grapes to the pan. Add salt and pepper and toss grapes gently in the pan and start to caramelize the grapes. This should take around 3-4 minutes for the grapes to get golden brown.
Take grapes off the heat and put them to the side.
Halloumi
In a small pan, on high heat, add halloumi to the pan. No olive oil or butter is required here.
Pan sear each side for about 1-2 minutes or until golden brown.
To Serve
On a large dinner plate, place arugula and scatter onto the plate. Place Haloumi in the centre of the plate gently on the arugula.
Add grapes to the plate, and then dress arugula and grapes in your dressing. Enjoy.
