Pan seared provolone with mixed microgreens and Ontario strawberries

Afrim Pristine shows us his best pan-searing tricks for provolone with this creamy dish topped with a delicious balsamic and basil dressing made with fresh Ontario strawberries.

Ingredients
Pan seared Provolone
- 1 slice (2 inch) mild provolone
Strawberry Balsamic Dressing
- 1/4 pint fresh strawberries
- 20 ml aged balsamic vinegar
- 15 ml olive oil
- Small handful fresh basil, chopped
- Salt and pepper to season
- Handful of fresh mixed microgreens or good quality baby greens
Directions
Pan Sear the Provolone
- In a medium-size pan on med/high heat, pan sear provolone for about 2 minutes on each side or until golden brown. Then place to the side.
For the Strawberry Balsamic Dressing
- Slice strawberries thinly and toss gently in olive and balsamic.
- Add a few pinches of salt and pepper and chopped basil. Stir with a spoon to incorporate all flavours.
To Serve
- On a large dinner plate, put seared provolone in the centre of the plate. Pour marinated strawberries on top of the cheese and garnish with microgreens. Enjoy!
