Irish winter cocktail

Cozy up on a cold night with this warming, spiced cocktail.

Ingredients
- 1 ounce Jameson Irish Whiskey
- 1/4 ounce Baileys Irish Cream
- 1/4 ounce Amaro Nonino
- 1 1/2 ounces Guinness reduction
- 2 ounces Guinness
- 1 egg white
- Angostura bitters
Guinness Reduction
- 2 cups Guinness draught
- 3/4 cup brown sugar
Directions
- Combine all ingredients except the Guinness Draught and Angostura Bitters in a shaking tin and vigorously dry shake for one minute.
- Add ice and shake for a further 10 seconds and double strain into a chilled coupe glass.
- Allow cocktail to rest for a few seconds and slowly pour in the Guinness Draught to layer over top of the cocktail. Finish with the Angostura Bitters over top.
Guinness reduction
- Combine all ingredients into a medium sized pot and bring to a rolling boil. Once the mixture begins to boil reduce heat to a light simmer.
- Allow to reduce for 10 minutes stirring occasionally.
- Once finished chill in fridge overnight.
