Irish winter cocktail

Cozy up on a cold night with this warming, spiced cocktail.

SERVES
1

Ingredients

  • 1 ounce Jameson Irish Whiskey
  • 1/4 ounce Baileys Irish Cream
  • 1/4 ounce Amaro Nonino
  • 1 1/2 ounces Guinness reduction
  • 2 ounces Guinness
  • 1 egg white
  • Angostura bitters

Guinness Reduction

  • 2 cups Guinness draught
  • 3/4 cup brown sugar

Directions

  1. Combine all ingredients except the Guinness Draught and Angostura Bitters in a shaking tin and vigorously dry shake for one minute.
  2. Add ice and shake for a further 10 seconds and double strain into a chilled coupe glass.
  3. Allow cocktail to rest for a few seconds and slowly pour in the Guinness Draught to layer over top of the cocktail. Finish with the Angostura Bitters over top.

Guinness reduction

  1. Combine all ingredients into a medium sized pot and bring to a rolling boil. Once the mixture begins to boil reduce heat to a light simmer.
  2. Allow to reduce for 10 minutes stirring occasionally.
  3. Once finished chill in fridge overnight.
