Mediterranean pomegranate and feta cheeseball

A tasty dish that's great as an appetizer or party food.

Ingredients
- 1 cup cream cheese
- 2 cups feta cheese, sheep or cow (not goat), crumbled and firmly packed
- 1 1/2 tablespoons pomegranate molasses
- 1 teaspoon butter, softened
- 1/4 cup + 2 tablespoons fresh mint, finely sliced
- /4 cup + 1/4 cup pistachios, chopped
- 1/4 cup toasted sesame, to coat
Directions
- Cream together first four ingredients in medium sized mixing bowl, using large wooden spoon.
- Gently fold in quarter cup each mint and pistachios.
- Chill in fridge, covered, for four hours.
- When fully chilled and easy to handle, roll quickly into ball shape, then roll in reserved nuts, sesame and mint.
- Serve with crostini, ciabatta and crackers.
