Ingredients

1/2 cup basil leaves (or parsley, chervil, etc.)

1/4 cup olive oil

2 tablespoons grated parmesan (or Pecorino Romano, Grana Padano, etc.)

1 clove minced garlic

1 tablespoon almonds (or walnuts, pistachios, pine nuts, etc)

Italian Bread cut into 5 centimeter slices (or any crusty bread)

Thinly sliced mozzarella (or any other melting cheese like provolone, havarti, monterey jack, etc)

Ripe tomatoes, cut into rounds

Arugula

Salt to taste
Directions
- Combine basil, olive oil, parmesan, garlic, almonds, and a pinch of salt in a blender to create pesto. Blend until smooth.
- Brush olive oil lightly on one side of each slice of bread. Spread pesto on the opposite side of both slices.
- Layer sliced mozzarella on one side of bread, covering the entire surface. Top with tomatoes, and season with a sprinkling of salt. Lastly, add arugula, and top with other slice of bread.
- Place in a hot Indoor grill/panini press/pan and cook for three to four minutes, or until bread is golden and toasted, and the cheese has melted. Enjoy! :)
