Marbled citrus clover cookies

Bring a bright and tangy flavour to your next get-together with these cookies! To create the marbled effect, colour half the dough with green food colouring and then gently knead the two halves of dough together before rolling it out. Tip: Use gel food colouring instead of liquid to ensure you don’t affect the texture of your dough when you are dyeing it

Ingredients

  • 1 cup room temperature unsalted butter
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 egg, room temperature
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 cups all-purpose flour, plus more for dusting work surface
  • Zest of one lemon
  • Zest of one lime
  • Green gel food colouring

Directions

  1. Preheat oven to 350°F. Set rack at the middle position. Line baking sheet with parchment paper. 
  2. Using a hand mixer or stand mixer with the paddle attachment, cream butter and sugar together until smooth, at least three minutes.
  3. Add vanilla extract and egg and beat for another minute.
  4. In a separate bowl, combine baking powder, salt, flour, lemon zest, and lime zest. Whisk until well combined.
  5. Add dry ingredients to wet ingredients and mix on medium until well incorporated.
  6. Divide the dough in half, with one half still in the mixing bowl. Add a couple of drops of green food colouring to this half and mix on low until it is coloured evenly. Add more food colouring until the desired shade is achieved. 
  7. Turn out both halves of the dough onto a floured surface. Gently knead together to create a marbled look to the dough. 
  8. Do not chill the dough! Roll it out to approximately a quarter-inch thickness and cut clover shapes with a cookie cutter.
  9. Carefully transfer cookies onto a baking sheet.
  10. Bake for 12 to 14 minutes or until the edges are slightly golden.
  11. Remove from oven and cool on a rack. Enjoy! 

TIP: Store cookies in an airtight container at room temperature for about one week and in the freezer for up to three to four months.
