Oatmeal chocolate chip cookie bars

This snack will give you all the flavour you love from a great chocolate chip cookie, baked into easy and delicious bars. Made with rolled oats, chocolate chips, and brown sugar, these bars will become your kid's favourite snack.

Ingredients

  • 1 cup butter, room temperature
  • 3/4 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 cups all-purpose flour
  • 2 cups old-fashioned rolled oats
  • 2 cups chocolate chips of your choice like semi-sweet, milk chocolate, candy coated chocolate
  • 4 tablespoons ground flax (optional)

Directions

  1. Preheat oven to 350°F. Lightly grease a 9 x 13 in. pan with parchment paper
  2. In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
  3. Add the eggs one at a time, mixing after each addition. Add the vanilla.
  4. In a separate bowl combine salt, baking soda, baking powder, flour, rolled oats, and one cup of chocolate chips and ground flax (if using).
  5. Add to the butter mixture and stir until combined.
  6. Spread the cookie dough into the bottom of the prepared pan, pressing the dough down carefully.
  7. Sprinkle the remaining cup of chocolate chips on top.
  8. Bake for 25 to 30 minutes or until golden brown. Allow cooling completely before cutting. 
  9. Cut and enjoy!
