Unicorn bread

This one is super fun for kids because it's so colourful. The recipe cuts down on the sugar and it's super easy to sneak in some grated zucchini if you want to make a bit more on the healthier side. Made with bananas, unsalted butter and sprinkles, this is fun to make and fun to eat!

Ingredients
Unicorn Bread
- 1/2 cup unsalted butter, softened
- 3/4 cup sugar
- 2 eggs
- 3 large bananas, mashed
- 2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Pink, purple and neon green gel food colouring
- 3 medium ice cream scoops
- 3/4 cup grated zucchini (optional)
White Icing
- 1 cup powdered sugar
- 1 1/2 teaspoon milk
- 1/2 cup unicorn sprinkles
Directions
For the Bread
- In a large mixing bowl, whisk together the flour, baking soda, and salt until combined
- Preheat oven to 350°F and spray a 9×9 loaf pan with baking spray
- Using a standing mixer, beat together the sugar and butter until smooth and creamy
- Beat in the eggs, one at a time until combined after each egg.
- Mix in the mashed bananas.
- Gradually mix in the dry ingredients until combined
- Add the grated zucchini if desired at this point
- Divide the batter into three bowls
- Add a few drops of the pink gel food colouring into one bowl
- Add a few drops of the purple gel food colouring into the second bowl
- Add a few drops of the neon green gel food colouring into the third bowl
- Mix the colours until combine
- Using the medium ice cream scoopers, scoop a few dollops of the pink batter into the loaf pan
- Scoop the purple coloured batter into the loaf pan
- Scoop the neon green batter onto the top of the other two coloured batters
- Sprinkle the remaining sprinkles onto the top of the batter
- Bake in the oven for 45-65 minutes or until a toothpick comes out clean
For the Icing
- Mix together the icing sugar and milk. If too dry, add more milk
- Drizzle on top of cooled bread
- Sprinkle with sprinkles
To Serve
- Cut bread into slices. Serve and enjoy!
