Mexi-mac and cheese

Ingredients

  • 1 box of mac and cheese
  • 1 roma tomato, diced
  • 1 tablespoon pickled jalapeno
  • 1 tablespoon pickled jalapeno juice
  • 1 shallot, minced
  • Juice and zest of 1 lime
  • 1 teaspoon avocado oil
  • 1/4 cup fresh cilantro, chopped

Directions

  1. In a bowl, combine the tomato, jalapeno with the juice, shallot, lime juice and zest, and avocado oil.
  2. Prepare the mac and cheese according to package directions. Once prepared and still in the pot, stir in the salsa and cilantro. Serve hot.

TIP

Add shredded chicken for extra protein!
