Ingredients

1 package flour tortillas

1/2 cup butter, melted

1/2 white onion, minced

455 grams ground beef

1 package taco seasoning OR raid your pantry and use your own seasoning such as 1 teaspoon each of paprika, cayenne, ground cumin, garlic powder and onion powder.

2 cups shredded cheddar cheese, divided

1 cup salsa
-
1 cup sour cream
-
1 cup guacamole
Directions
- Pre-heat oven to 350° and spray the reverse side of a muffin tin (flip it over so the openings are on the bottom) with non-stick cookie spray.
- Using a cookie cutter, cut out about five to six circles from each tortilla. Brush both sides of the tortilla circles with butter and place them in between each muffin cup creating a taco shape.
- Bake for about five to six minutes or until the shells start to take on some colour. Remove from the oven and let them cool.
- Meanwhile, to a medium size skillet over medium high heat, add the minced onion and let that cook for about three to four minutes. Then add the ground beef and seasonings. Continue to cook for another eight to ten minutes or until the beef is fully cooked.
- Add one cup of shredded cheese to the meat mixture and mix to combine.
- Let your grads make their own mini tacos using the ground beef mixture, extra cheese, salsa, sour cream and guacamole. Enjoy!
