No-churn eggnog ice cream

Eggnog is the type of drink people either love or hate. It's rich, creamy, and well egg-y! We fall into the camp of people who love it. Shahir Massoud shared this no-churn eggnog ice cream that is truly the easiest thing to make. Made with whipping cream, and sugar will become your family's new holiday favourite!

Ingredients
No-Churn Eggnog Ice Cream
- 1 1/2 cups whipping cream
- 1 cup eggnog
- 1/4 cup + 2 tablespoons sugar
- 1/4 teaspoon xanthan gum (optional, but makes a difference!)
Directions
- For the ice cream, whip your cream to medium peaks, about three to four minutes.
- Add the sugar and vanilla, then continue to whip until stiff peaks form.
- Then fold in the eggnog gently with a spatula, sprinkling in the xanthan gum if you're using it (this prevents the ice cream from crystallizing in the freezer!).
- Then transfer the mixture to a chilled loaf pan and freeze for a minimum of six hours, up to overnight.
- When ready to serve, scoop ice cream into bowls, or on top of Shahir's sticky toffee pudding. Enjoy!
