No-churn eggnog ice cream

Eggnog is the type of drink people either love or hate. It's rich, creamy, and well egg-y! We fall into the camp of people who love it. Shahir Massoud shared this no-churn eggnog ice cream that is truly the easiest thing to make. Made with whipping cream, and sugar will become your family's new holiday favourite!

Ingredients

No-Churn Eggnog Ice Cream

  • 1 1/2 cups whipping cream
  • 1 cup eggnog
  • 1/4 cup + 2 tablespoons sugar
  • 1/4 teaspoon xanthan gum (optional, but makes a difference!)

Directions

  1. For the ice cream, whip your cream to medium peaks, about three to four minutes. 
  2. Add the sugar and vanilla, then continue to whip until stiff peaks form. 
  3. Then fold in the eggnog gently with a spatula, sprinkling in the xanthan gum if you're using it (this prevents the ice cream from crystallizing in the freezer!). 
  4. Then transfer the mixture to a chilled loaf pan and freeze for a minimum of six hours, up to overnight. 
  5. When ready to serve, scoop ice cream into bowls, or on top of Shahir's sticky toffee pudding. Enjoy!
