No-cook chicken wraps with peanut sauce

Cool down on those hot summer days with these no-cook chicken wraps. Head to the grocery store and pick up a ready-made rotisserie chicken and make these delicious wraps featuring easy homemade peanut sauce made with tamari, peanut butter and garlic.  Dinner, done!

Ingredients

No Cook Peanut Sauce

  • ½ cup natural peanut butter
  • ¼ cup reduced sodium tamari, soy or coconut aminos
  • 3 tablespoons water
  • 3 tablespoons seasoned rice vinegar
  • 1 tablespoon honey, agave or maple syrup
  • 1 teaspoon fresh ginger, grated
  • 2 cloves garlic, minced
  • Sriracha to taste

No Cook Chicken Wraps

  • Meat from 1 rotisserie chicken, shredded
  • 1 cup red cabbage, shredded
  • 1 bell pepper, diced
  • 2 heads butter lettuce, leaves removed
  • Crushed peanuts for garnish
  • Green onions, thinly sliced for garnish
  • Sesame seeds for garnish

Directions

Make the Peanut Sauce 

  1. Combine peanut butter, tamari, water, rice vinegar, honey, grated ginger, minced garlic and sriracha in a blender and puree until smooth.
  2. Set aside until ready to serve. 

Create Your Wraps

  1. Place the shredded chicken and veggies in a bowl along with a spoonful or two of the peanut sauce. Toss until coated, then put into the lettuce cups.
  2. Top with crushed peanuts, onions, and sesame seeds. Enjoy!
