2 cups sliced dill pickles (drained and patted dry)
1/2 cup all purpose flour
Salt and pepper
1 large egg
2 tablespoons water
1 cup panko breadcrumbs
1/4 cup grated parmesan cheese
Non-stick cooking spray
Ranch dressing, for dipping
Directions
Preheat the oven to 450 degrees and line and spray a baking sheet generously with non-stick cooking spray.
On a plate mix together flour with a big pinch of salt and pepper. On another place whisk together egg and water. Lastly mix together breadcrumbs and parmesan cheese on another plate.
Dip pickle slices in flour, then egg, and lastly the breadcrumbs to coat. Arrange slices in one layer on a baking sheet and spray the tops with non-stick cooking spray.
Bake for 13-15 minutes, or until golden and crispy.
