Pancake "donuts"

Pancakes on the go have been made possible thanks to this recipe! Make this healthy version of pancake batter, made with banana and whole wheat flour, and then bake them into fluffy donuts. Sprinkle berries inside the batter to add a little nutrition, and your kids will love this on-the-go breakfast.

Ingredients

  • 1 ripe banana
  • 1 egg
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1/2 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/4 cup almond flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon sugar
  • Berries and/or chocolate chips for sprinkling
  • Butter, to grease donut pan
  • Icing sugar, for garnish

Directions

  1. Mix the banana, egg, buttermilk, and vanilla in a bowl or blender until totally smooth and incorporated.
  2. In a separate bowl, combine the AP flour, whole wheat flour, almond flour, salt, baking powder, and sugar then whisk well to incorporate. 
  3. Add the wet ingredients to the dry, then stir just to combine. 
  4. Transfer the batter to your greased donut pan and top with your choice of berries or chocolate chips. Bake for 18 minutes. 
  5. Remove and top with powdered sugar and maple syrup. Enjoy!
