Peanut butter mother lover

I did my best to breastfeed two babies, but it was hard for a number of reasons. For the first couple of weeks I was pumping or breastfeeding at least 13 hours a day, and it never seemed like enough milk was coming out of me or enough food was going in. Drinkable calories—for the first time in my life—were a good thing. This recipe is delicious, requires no real planning and, I’ll be honest, if you throw in a splash of Baileys, it doesn’t hurt.

Ingredients

  • 2 Medjool dates, pitted
  • 1 large banana
  • 2 heaping teaspoons (12 mL) cacao powder
  • 2 heaping tablespoons (36 mL) natural peanut butter
  • 1/2 cup (125 mL) Vanilla Almond Milk or nut milk of choice
  • Pinch of salt
  • 1 cup (250 mL) ice cubes

Directions

  1. Place the dates in a small bowl of warm water and let soak for ten minutes, until softened. If you don’t have time for this step, just chop them up a bit.
  2. Place the dates, banana, cacao, peanut butter, milk and salt in a blender. Add the ice. Blend for 30 to 45 seconds, or until smooth. Serve immediately.
  3. TIP: Anytime you are making a smoothie, add the ice last. The ice will press down the other ingredients, which will help them blend, and since the ice blends last, your smoothie will come out colder and a little thicker.
