Pomegranate gin fizz

This cocktail, made with pomegranate juice and gin is perfect for the holidays! Using the reserved liquid from a can of chickpeas, known as aquafaba, it can make for a great vegan substitute for egg whites. Here we're using it to top our delicious fizzy and boozy drink.

Ingredients

  • 3 oz club soda
  • 2 oz gin
  • 2 oz pomegranate juice
  • 1oz Aquafaba (reserved liquid from canned chickpeas)
  • Ice cubes

Directions

  1. Pour club soda in a nine oz cocktail/champagne glass. 
  2. In a cocktail shaker, add gin, pomegranate juice, Aquafaba (while chickpea liquid is most commonly used, liquid from any other canned white beans also work) and four to five ice cubes.
  3. Put the lid on and shake well for 30-40 seconds until frothy. Strain in glass to top up club soda! Serve and enjoy!

TIP: To make a mocktail, substitute gin for an additional ounce of pomegranate juice and soda.
