Christmas pomegranate Campari spritz

This makes for a wonderfully festive little pre-dinner drink at Christmas. Made with bright pomegranate, prosecco and Campari, everyone will love this delicious cocktail.



Simple Syrup

  • 200g sugar
  • 250ml water
  • 2 whole cloves
  • 1 cinnamon stick
  • 2 star anise
  • 3 peels of orange

Pomegranate Campari Spritz

  • 4 handfuls ice
  • 150ml Campari
  • 100ml pomegranate juice
  • 300ml prosecco or sparkling wine
  • 2 oranges, peeled, for garnish
  • 4 sprigs mint, for garnish


Simple Syrup

  1. Place all the ingredients for the simple syrup in a small saucepan and place over medium-high heat and bring to a steady simmer. Simmer for 10 minutes until slightly thickened. 
  2. Allow to cool and set aside in a resealable jar. Store in the fridge for up to a week.


  1. Fill four glasses with ice.
  2. In a large shaker, combine the Campari, pomegranate juice and four tablespoons of the cooled simple syrup with a handful of ice. Shake vigorously for two minutes and then divide and strain into the prepared glasses.
  3. Top with prosecco and garnish with orange peel and mint sprigs.
  4. Serve and enjoy!
