Christmas pomegranate Campari spritz

This makes for a wonderfully festive little pre-dinner drink at Christmas. Made with bright pomegranate, prosecco and Campari, everyone will love this delicious cocktail.

Ingredients
Simple Syrup
- 200g sugar
- 250ml water
- 2 whole cloves
- 1 cinnamon stick
- 2 star anise
- 3 peels of orange
Pomegranate Campari Spritz
- 4 handfuls ice
- 150ml Campari
- 100ml pomegranate juice
- 300ml prosecco or sparkling wine
- 2 oranges, peeled, for garnish
- 4 sprigs mint, for garnish
Directions
Simple Syrup
- Place all the ingredients for the simple syrup in a small saucepan and place over medium-high heat and bring to a steady simmer. Simmer for 10 minutes until slightly thickened.
- Allow to cool and set aside in a resealable jar. Store in the fridge for up to a week.
Spritz
- Fill four glasses with ice.
- In a large shaker, combine the Campari, pomegranate juice and four tablespoons of the cooled simple syrup with a handful of ice. Shake vigorously for two minutes and then divide and strain into the prepared glasses.
- Top with prosecco and garnish with orange peel and mint sprigs.
- Serve and enjoy!
