This makes for a wonderfully festive little pre-dinner drink at Christmas. Made with bright pomegranate, prosecco and Campari, everyone will love this delicious cocktail.
2 whole cloves
1 cinnamon stick
2 star anise
3 peels of orange
Pomegranate Campari Spritz
4 handfuls ice
100ml pomegranate juice
300ml prosecco or sparkling wine
2 oranges, peeled, for garnish
4 sprigs mint, for garnish
Place all the ingredients for the simple syrup in a small saucepan and place over medium-high heat and bring to a steady simmer. Simmer for 10 minutes until slightly thickened.
Allow to cool and set aside in a resealable jar. Store in the fridge for up to a week.
Fill four glasses with ice.
In a large shaker, combine the Campari, pomegranate juice and four tablespoons of the cooled simple syrup with a handful of ice. Shake vigorously for two minutes and then divide and strain into the prepared glasses.
Top with prosecco and garnish with orange peel and mint sprigs.
