Heat oven to 375°F (176°C). Line a rimmed baking sheet with parchment paper.
Place jackfruit on prepared sheet and drizzle with canola oil; toss to coat. Roast until deep golden and softened, about 35-40 minutes. Set aside to cool for ten minutes.
Using two forks, pull fruit apart into bite-sized pieces. Transfer fruit to a medium saucepan with barbecue sauce over medium heat. Heat, stirring often until the fruit is well coated and heated through and the sauce has thickened, about ten minutes.
Serve on buns with your favourite coleslaw on the side.
