'Pulled pork' jackfruit
Ingredients
- 5 cups of jackfruit bulbs, seeds removed
- 2 tablespoons (30 milliliters) canola oil
- 1 to 1-1/2 cups (236-325 milliliters) BBQ sauce
Directions
- Heat oven to 375°F (176°C). Line a rimmed baking sheet with parchment paper.
- Place jackfruit on prepared sheet and drizzle with canola oil; toss to coat. Roast until deep golden and softened, about 35-40 minutes. Set aside to cool for ten minutes.
- Using two forks, pull fruit apart into bite-sized pieces. Transfer fruit to a medium saucepan with barbecue sauce over medium heat. Heat, stirring often until the fruit is well coated and heated through and the sauce has thickened, about ten minutes.
- Serve on buns with your favourite coleslaw on the side.
